Square Peg Pizzeria is planning to open an express location at Montana Nights Axe Throwing in Newington.
Newtington's Planning and Zoning Commission earlier this month approved a plan for Square Peg to use about 400 square feet of space inside Montana Nights' 7,700-square-foot facility on 80 Fenn Road, John Matte of Square Peg told the commission at a public hearing.
"What we have discussed with Montana Nights is putting in a small wood fired oven kitchen in there, to be able to cook pizza for their guests that come there," Matte said at the meeting. "There will be a few other things, pizza, maybe a few appetizers, but everything would be contained in a wood fired oven."
Since COVID-19 protocols began restricting establishments from serving alcohol without food, Montana Nights has been serving pre-packaged pizza and other ready-made food to customers, Matte said.
The Glastonbury restaurant is currently expanding to several other locations, Square Peg accountant and project manager Monthira Phothisaeng said Monday morning. A new Square Peg storefront in Vernon is under construction, and the restaurant is in talks with a Manchester brewery -- which Phothisaeng declined to identify -- to place a Square Peg Express inside. Square peg also has a food truck, which it operates outside local breweries in Greater Hartford.
"We definitely have grown," Phothisaeng said. "I think a lot more people are aware of what we have [from operating] at breweries."
Restaurateur Tyler Anderson, who owns Millwright's Restaurant in Simsbury, previously owned a stake in Square Peg, but left last year, he said.
Phothisaeng said Square Peg owners are hoping to complete construction on the Vernon and Montana Nights locations by the end of 2021.
